Scramble Egg and Smoked Salmon Burrito

  • 1 knob of butter
  • 6 eggs
  • 80g herb and cheese cream cheese (like Boursin)
  • 1/2 bunch chives, finely chopped
  • 4 burritos grande tortillas
  • 6 slices of smoked salmon
  • Salt and white pepper
  • Tabasco or any hot sauce of your choice
  • Lemon, to serve
  • Whisk the eggs with and salt and pepper.
  • Add the butter to a pan and allow to melt then pour in the eggs and sprinkle with chives. Let set for a few seconds, then bring the sides to the centre and swirl the pan to scramble the eggs.
  • Add knobs of cheese and fold in with spatula. Once just set and fluffy, remove from the pan.
  • Arrange salmon in one layer over each tortilla. Add cheesy eggs and roll into a burrito. Lightly toast on each side.
  • Serve with tobasco and lemon.
