Guacamole

La Banderita Clasica Totopos stone ground corn chips, to serve

Guacamole
  • 3 ripe avocados
  • 1/2 clove garlic
  • 1/2 white onion, finely chopped
  • 1 jalapeno chilli, finely chopped
  • 3 sprigs of coriander, stalks and leaves finely chopped
  • Juice and zest of 1 lime
  • Salt
Pico de gallo salsa
  • 2 ripe tomatoes, quarter and seeds removed, then finely diced
  • 1/2 white onion, finely chopped
  • 1 long red chilli, finely chopped
  • 3 sprigs of coriander, stalks and leaves finely chopped
  • Juice 1 lime
  • In a mortar and pestle, crush the garlic with a pinch of salt.
  • Add the avocado roughly mash leaving some bits chunky.
  • Fold in the onion, jalapeno, lime juice and zest and coriander.
  • Check season it may need a little extra salt.
  • For the pico de gallo, combine all the ingredients together and season with salt.
  • Serve the guacamole and pico de gallo with generous bowl of Totopos.
